Berry Trio Salad
I created this fruit salad recipe for a cooking demo here on Maui. I like it because it has texture, color, crunch, taste, and fun! The hint of mint, lemon, and maple syrup add a bit of sparkle too. This is a super easy recipe with not too much chopping or prep work. Try it and you will see for yourself! This recipe has a high nutrient density—packed with fiber, Vitamin C, manganese, and phytonutrients. A great, refreshing dessert to bring to your next summer party! Don't forget to add that beautiful pottery bowl. Enjoy!
Berry Trio Salad:
(serves 4)
Ingredients:
(use these measurements or mix to your taste)
• Blueberries (1 box)
• Raspberries (1 box)
• Pomegranate seeds (1 box)
• Fresh mint (1 small bunch)
• Maple syrup (2-3 tbsp)
• Fresh lemon (1-2 tbsp)
1. Wash fruit. Dry well with paper towel.
2. In large bowl (pick a pretty pottery bowl!),
add blueberries. Add raspberries. Add pomegranate seeds.
3. Sprinkle with fresh, chopped mint. Chill in fridge.
4. In small bowl, whisk maple syrup and lemon to taste. Set aside.
5. When ready to serve, whisk maple dressing onto chilled fruit salad. Toss lightly with your hands, as the fruit is delicate.
Serve in pretty bowls.
